“My absolute favorite Easter dessert to make is Spring Animal Cupcakes. These are super easy to make and they always are a major hit at Easter dinner (or any time during the spring!). Simply make a batch of cupcakes of your preferred flavor, then decide which animals you want to make.
For a chick, frost the cupcake with yellow buttercream, roll in yellow sprinkles, then use the buttercream to attach 2 brown mini M&M eyes and an orange Cry Baby Tears beak. Create the wings with 2 yellow Necco wafers and press them into the cupcakes.
For a lamb, frost the cupcake with white buttercream, then roll in white nonpareils to cover. Take the cookie part of an Oreo to make a tapered head and another cookie portion to make ears. As with the chick, add the M&M eyes and use small buttercream dots for wool.
For a rabbit, frost the cupcake with plain buttercream, roll in desiccated coconut to cover, then snip a marshmallow to make ears and attach them with pretzel sticks. Use a jellybean for the nose and chocolate sprinkles for whiskers, then M&M’s for eyes.
For a pig, frost with pink buttercream, then roll in bright pink sanding sugar to coat. Add the M&M eyes, a pink Necco wafer for the snout, and small brown buttercream lines for nostrils. You can also use a pink marshmallow for ears.”
